Rocky Road Brownies

It's like Rocky Road ice cream, but in a brownie!!  What could be better?? 

Ingredients

  • 1 stick of UNSALTED butter
  • 12 oz bag of semisweet chocolate chips
  • 1/2 cup light brown sugar
  • 1/2 cup white sugar
  • 1/2 tsp salt
  • 2 large eggs
  • 3/4 cup all-purpose flour
  • 1 cup mini marshmallows
  • 1/2 cup of peanuts (can sub with your favorite nuts: almonds, cashews, etc!)

Tools

  • 8 in square baking pan
  • parchment paper
  • large, heat safe mixing bowl
  • whisk
  • set of measuring cups and spoons

Prep Tips

  • Get your double boiler going (see HHK How To Make a Double Boiler) before you start pulling out your ingredients and tools!  Just place your pot of water on the stove and set it to boil with its lid on.

Step-by-Step

  1. Preheat the oven to 350F.
  2. Prep the pan: Butter it --> Place parchment paper over the bottom with a 2 inch overhang on the sides --> Butter OVER the parchment paper!
  3. Melt butter and 1 cup of chocolate chips in your Double Boiler.  Heat, stirring occassionally, until just melted (about 3-5 minutes).
  4. Remove melted butter and chocolate from heat.
  5. Stir in both sugars and salt, then eggs, and lastly the flour.  Stir until JUST combined.
  6. Pour the batter in the prepared pan and bake approximately 25-30 minutes (insert a toothpick into the center and see if it comes out pretty clean).
    • As the brownies are baking, mix the marshmallows, peanuts, and remaining chocolate chips in a bowl!
  7. Remove the brownies from the oven and spread toppings mix over the top.  Lightly push down on the toppings to make sure they bake in!
  8. Put back in the oven for about 3-4 minutes: chocolate will be shiny and marshmallows will be puffed out.
  9. Remove from the oven and let cool for 5 minutes in the pan.  Use the parchment paper overhang to lift brownies from the pan onto a serving plate.  Cut into squares and serve!  Cheers ;)

Serving Suggestions

If bringing these to a party, make in enough time to refrigerate for 30 minutes to an hour so they won't melt during transport!  Be sure to have a carton of milk on hand: these brownies are so rich, chocolately, and delicious that a cold glass of milk is a great way to make them even more tasty!
