Coconut and Lime Cookies

A tropical & refreshing spin on storebought sugar cookie mix!!

 Ingredients

  • Bag of dry mix sugar cookie dough (NOT the tube!) 
  • about 2 limes
    • 1 tbsp lime zest + more for garnish
    • 3 tbsp lime juice
  • 1 egg
  • 1/2 cup sweetened shredded coconut
  • 3/4 stick (or 6 tbsp) of butter

Tools

  • Cookie sheet
  • Parchment paper or cooking spray
  • Grater or zester
  • Measuring cups and spoons
  • Mixing spoon or rubber spatula
  • Large mixing bowl
  • Knife and small bowl/glass

 

Step-By-Step

  1. Preheat the oven to 350F.  Place butter NEAR (not on!) the oven to facilitate softening if butter is just coming out of the fridge.
  2. Use a zester or small grain grater to get your lime zest.  Juice the limes by cutting them in half and squeeeezing into a small bowl or glass.
  3. In large bowl, mix together: cookie mix, coconut, lime zest, butter, lime juice (put as much or as little as you like!), and egg.  A soft dough will form.
  4. Drop even tablespoons of dough onto cookie sheets.
  5. Bake 7 to 10 minutes (depends on the oven!).  Edges will be golden brown.
    • Don't overbake!!  It's one of the reasons people tend to dislike sugar cookies :(
  6. Remove from the oven and top with lime zest!  Cool for 1 minute on the pan, then remove from baking sheets and cool for 15 minutes.  Cheers!
