happy hour kitchen in Baked Goods and Desserts, Muffins
Homemade muffins are definitely the way to go! Especially when they're packed with sweet ripe bananas and a bag's worth of chocolate chips :)
Ingredients
1 3/4 cup flour
3/4 cup white sugar
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1/2 cup vegetable oil
1/2 cup plain yogurt
1 egg
1 tsp vanilla extract
3 over ripe bananas
1 bag semisweet chocolate cookies
Tools
Large mixing bowl
Medium mixing bowl
Measuring cups and spoons
Mixing spoon or rubber spatula
Muffin tin
Paper liners or cooking spray
Step-by-Step
Preheat oven to 350F, and prep the pan (either with paper liners or a healthy coat of cooking spray).
Combine the dry ingredients in the large mixing bowl: Flour, sugar, baking soda, baking powder, and salt. Give a good stir!
Combine the wet ingredients in the medium mixing bowl: Egg, oil, yogurt, and vanilla. Make sure that the egg yolk is completely broken, and give it a good stir!
Pour the wet ingredients into the dry ingredients. Combine JUST until all dry ingredients are moistened.
Peel bananas (or squeeze!!). FOLD bananas and chocolate chips into the batter.
Fill muffin cups about 2/3 full, unless you like the little muffin top to spill over. Then pour to near the top of each muffin cup
Bake for 22-25 minutes or until a toothpick comes out clean.
Cool in muffin tins for 5 minutes before moving to a wire rack. CHEERS!!!
Serving Suggestions
These are great to bring to work parties!! Easy to transport (no frosting to get all over the place, and unlike some baked goods, they're quite durable and don't mush!), and a refreshing change to the normal storebought cookies and sweets.
