Baked Brie

Now watch this Polish boy show you how to make a baked brie. Bring this bad boy to any party, and you're the insta-life-of-the-party because who doesn't like ooey gooey cheese?!
Ingredients
- 6-12 oz brie (Camembert works too - both are soft creamy cow’s milk cheeses that come round with white rinds)
- 1 sheet of frozen puff pastry dough
- 2 portabella mushroom caps
- 4-6 tbsp apricot jam
- Cooking spray (Pam, Olive Oil Spray, Canola Oil Spray, all work!)
- Salt and pepper
- Baguette or crackers (optional, for serving)
Tools
- Cutting board
- Sharp knife
- Measuring spoons
- Spatula
- Serving spatula (flipper kind)
- Baking sheet (can substitute with anything oven safe that brie can fit in, a closely fitting ceramic bowl is the best option for oven-to-table serving)
Prep Tips
- You can use all kinds of veggies and jams inside of a brie – so feel free to experiement!
Step-by-Step
- Preheat oven to 350 degrees.
- Keep brie in the fridge.
- Get puff pastry dough to room temp. If you leave it on a plate, flour the plate a little so that the dough doesn’t stick to it.
- Wash and dry the portabella caps, removing any stem.
- Slice the portabella caps into strips about ¼ inch thick and slice all strips in half.
- Spray your baking sheet with a lot of cooking spray – so it becomes a baking sheet slip n’ slide.
- Lay down puff pastry dough on baking sheet. If it is still a bit frozen and not at room temp, dough could crack. If dough it too warm, it could easily tear as you use it. Just pinch together any holes you make.
- Spread ½ of the apricot jam in a circle on the center of the pastry dough.
- Cover with ½ of the slices (from one mushroom cap).
- Put brie (from fridge!) on top of pile mushroom-jam nest.
- Coat top of brie in second ½ of apricot jam and plot on remaining portabella mushrooms
- Pull the pastry dough over the brie and push together the seems. Pulle over corner frst and then pull together sides. You don’t want any goodness leaking out!
- Sprinkle closed, covered brie with salt and pepper, and spray with cooking spray (some people use melted butter).
- Put in oven for 30 minutes to bake, then remove.
- Cool for 5 minutes before serving.
- Enjoy!
Serving Tips
- Serve with crackers or baguette slices. You can warm the baguette slices in the oven for 3 mins after taking the brie out, while the brie cools.
